Juice and zest from 1 lemon
1 teaspoon extra virgin olive oil
1-3 ounce package Natural Sea Tuna
1 teaspoon LocalFolks Foods mustard
1 tablespoon sunflower seeds
1 tablespoon minced chives

Cut the avocado in half and scoop the middle of both avocado halves into a bowl, leaving about ¼-inch of the flesh on each half.
Mash the avocado with lemon juice and olive oil until smooth. Add the tuna, mustard, sunflower seeds, lemon zest, chives, and salt to the mashed avocados and mix until combined.
Fill avocado shell halves with tuna mixture and serve immediately. Enjoy with a spoon.
