1 bag (28-32 ounces) sweet potatoes
1 tablespoon butter
1 tablespoon maple syrup
1/3 cup (or more) full fat coconut milk
Salt and ground black pepper
Preheat oven to 400 degrees. Wash and dry sweet potatoes then pierce them all over with a fork. Arrange them in an 8 x 8 inch casserole dish. Bake until tender, 60 to 90 minutes.
Slice in half lengthwise, spread butter over cut surface, season with salt and pepper, then drizzle maple syrup and coconut milk over the top.
