Chorizo, Kale and Potato Soup


I was introduced to this amazing recipe just a couple weeks ago by my friend Kat, a fellow Green BEAN Delivery member. I did a few things differently to “make it my own” and wow!, I can’t get enough!

The great thing about this recipe is that it’s so simple, versatile and jam packed with flavor. The chorizo adds so much natural flavor that you don’t really need much more in the way of flavoring! This recipe is one that you can make with very little measuring involved. I’m a big fan of ad-lib type recipes and this is definitely one of them.


Recipe Instructions:

Bring water to a boil and add the chopped potatoes and cook unit tender. While potatoes are cooking, brown the chorizo with the onions and garlic in a skillet.

Pour the 32oz carton of chicken broth into a soup pot (or crock pot) and add your cooked potatoes and chorizo.

Measure 1 cup of heavy whipping cream, add the flour (needed to help thicken the soup) to the cup of cream. Simply whisk this to try and break up any clumps, then add mixture to your soup. The heat of the soup will help dissolve the flour clumps, so don’t worry!

Finally, take the kale (rinsed) and chop or tear up the amount you’d like, toss it in the soup!

Give it a good stir, add your salt, pepper, red pepper flakes or hot sauce as desired and put the lid on.

Let this simmer for about 30 minutes (or longer if desired, especially with the use of the crock pot!). I used a crock pot with this as I had some errands to run for about an hour after I cooked up the potatoes and chorizo, turned it on high and went on my way!


Final touches:

I used a few slices of the Scholars Inn Sourdough bread (chopped into cubes) to top the soup. The mildly sour flavor and denser consistency of the bread perfectly absorbs the soup. Top that with a bit of Organic Valley shredded cheese and you just can’t go wrong!
