Cucumber and Celery Salad with Tuna


Simple and tasty – this recipe makes a great late spring/summer salad for when it’s hot out and you don’t want to cook. I have served it over cut lettuce, but the recipe suggests stuffing it into a pita (which sounds good, too). Enjoy! – Beth Blessing

In a medium bowl, stir together poppy seeds, vinegar, sugar, and oil. Add cucumbers, celery, and tuna; season with salt and pepper. Toss well to coat. Sprinkle with celery leaves and serve immediately.
