Curry Chicken with Peaches & Dates

Now let’s get into this delicious recipe: Curry Chicken with Peaches & Dates. Does that sound like a mouthful? Well it is…literally. You only have about 15 minutes of prep time (which is mainly just cutting up your fruits and vegetables), and the oven does the rest of the work, making this recipe prepped and cooked in under an hour.

Instructions

  • Preheat your oven to 375 degrees.
  • Pat the chicken thighs dry and season generously with salt and pepper.
  • Peel the peaches and slice, chop the dates, and slice the shallots very thinly.
  • In a large oven-safe skillet, heat up the oil over medium heat. Place chicken in the skillet and brown, about 3 minutes per side.
  • While chicken is cooking, mix together chicken stock, apple cider vinegar, cumin, and curry powder, garlic, and sliced ginger and mix until combined.
  • Once chicken is cooked, place the peaches, dates, and onions in the same skillet. Pour the mixture over the chicken.
  • Place the skillet in the oven and cook for 30 minutes, until the chicken is golden and cooked through.
  • Garnish with chopped cilantro and serve by itself or over cauliflower rice.
