Ingredients
Citrus Vinaigrette
- 2 tablespoons orange juice, plus zest of ½ orange*
- 1 tablespoon lemon juice
- ½ tablespoon Dijon mustard
- ½ teaspoon maple syrup
- ¼ teaspoon kosher salt
- Fresh ground black pepper
- ½ cup extra virgin olive oil
- 1 fennel bulb*
- 1 large shallot
- 1 ½ oranges (use the other half for the vinaigrette)*
- 2 tablespoons chopped pistachios
- 5 ounces baby mixed greens (about 5 cups)*
