1 medium head cauliflower, trimmed and cut into 2-inch pieces
1 clove garlic, peeled and smashed with a knife
2 tablespoons butter
Salt and ground black pepper to taste
2 green onions, thinly sliced – Optional

Instructions
- Bring a large pot of salted water to a boil.
- Add the cauliflower and cook until fork tender, 10 minutes.
- Drain and then place in a food processor with butter, ½ teaspoon salt, and a couple turns of fresh black pepper.
- Purée until smooth, or if you like more texture, mash with a potato masher.
- Optional – Add sliced green onions on top for added color and flavor!
