Gluten-Free Braised Beef Stroganoff

A perfect recipe for a cold, winter weekend. A slow and low braised beef that is ultra-tender is combined with a slightly caramelized sauté of onions and mushrooms to make for the perfect comfort food dish. Serve over top of fettuccine and with a side of your favorite green vegetable, like roasted broccoli, and you have a complete meal.

Instructions

  1. Preheat oven to 300°F.
  2. Pat and dry stew meat then season generously with salt and pepper.
  3. Heat 1 tablespoon of butter in a large Dutch oven over medium-high heat. Add the meat and sauté until the meat is browned on all sides but not cooked through, 3-5 minutes. Sprinkle the arrowroot over the top of the meat; stir and cook until there is no visible white left.
  4. Pour in the wine; scrap up any brown bits on the bottom of the Dutch oven. Allow the wine to reduce by half, 5 minutes.
  5. Add the broth, bring to a boil, cover the pot with a lid, and move it to the oven. Cook for 2 ½ hours, until the meat is tender and falls apart.
  6. Remove from oven and ladle out a cup of sauce; allow to cool for 10 minutes. Season with more salt and pepper.
  7. Meanwhile, heat the remaining 4 tablespoons of butter over medium heat in a large cast iron or skillet. Add the onions and sauté until they start to soften.
  8. Add the mushrooms and continue to cook until golden brown and tender, 10 minutes.
  9. Add the cooked onions and mushrooms to the beef. Stir sour cream into the cup of cooled sauce then fold the sour cream mixture into the beef and mushroom mixture. Adjust seasonings with salt and pepper. Gently reheat over medium-low heat if necessary.
  10. Serve over cooked fettuccine and garnish with minced parsley.
