This Hazy IPA vegetarian pasta features Sun King Brewery’s Foxy Jam Pants, roasted Delicata squash, Sfoglini semolina pasta, and Carr Valley Grana Carina cheese. Finished with toasted pumpkin seeds for an added crunch, this pasta dish is loaded with standout flavors and textures that you’ll absolutely love!

1 lb Sfoglini Trumpet Pasta
1# Delicata Squash (Seeded and cut into 1″ chunks)
2 Shallots, thinly sliced
1 cup Organic Valley Heavy Cream
4 oz Foxy Jam Pants IPA
1 cup Toasted Pumpkin Seeds
1 Lemon, zest and juice (zest the lemon first!)
4 oz Carr Valley Grana Carina Cheese (shredded with a fine grater)
Olive oil and Salt to Taste
*Optional (Smoking Goose Bacon Bits (crisped up in the oven)
Culinary Director Steven Unrue has been a chef in Indiana for the past 13 years. He’s skilled craftsmanship in the culinary arts has allowed him to work at many great Indianapolis restaurants and private dining facilities. Learning and mastering food and beverage pairing has been a huge focus of Steven’s and is what led him to Sun King Brewery & Spirits.
As Culinary Director, Steven is currently building a database of paired recipes for all of Sun King Brewery’s variety of unique beers and handcrafted spirits. He is passionate about teaching other local chefs on how best to pair Sun King beer with their dishes. He aspires to educate not only the Sun King staff but all of Sun King’s fans with the knowledge of food and beer and why each style of beer pairs so well with various dishes.
- Toss Squash in Olive oil and Salt and Roast in a 400° oven until tender and lightly golden brown.
- Meanwhile, in a high walled skillet, sautee shallots in 2 tblspn olive oil until lighty brown and fragrant, add Foxy Jam Pants and Reduce by half. Add Heavy cream and lemon zest and reduce by 1/3 or until the cream coats the back of a spoon. Keep Warm.
- Bring 4 qts of water to the boil and add salt. Cook pasta 1 minute under directions on the box. Remove pasta from water (save that pasta water!!) and transfer pasta to heavy cream mixture and cook 2-4 min until everything has combined.
- Add lemon juice, squash, and 3 oz of cheese to pasta and continue to simmer until well combined. If pasta looks dry, add pasta water until sauce is creamy and smooth. Serve with toasted pumpkin seeds and bacon (optional).
