Ingredients
- 3 pounds russet potatoes, peeled and cut into chunks*
- 2 pounds yams or sweet potatoes, peeled and cut into chunks*
- 4 ounces (1 log) goat cheese*
- 1 cup milk
- 3 tablespoons unsalted butter
- Salt and pepper

Instructions
- Place potatoes and yams in a large pot, cover with water and bring to a boil.
- Reduce heat and simmer until tender, 20-25 minutes.
- Drain well, return to pot, add goat cheese, milk, butter and mash until almost smooth (I like to mash with a potato masher then blend with an immersion blender).
- Season with salt and pepper and serve.
