Mediterranean Chicken

One-pan dinners are a fantastic way to save time and blend flavors, and this dinner is rich with tastes of the Mediterranean, from the sharp, saline olives to the earthy warmth of the couscous. The delightful combination of basil and parsley plays throughout the entire dish and offers a pop of color along with the festive tomatoes and peppers.

By baking the chicken and vegetables together in the herb marinade, you create a delicious, flavorful dinner in less than an hour, and by serving the whole meal family style will allow diners to get as many helpings as they’d like! Looking for a lighter option? Reduce the couscous by half and serve with a salad of dark, leafy greens.

Instructions

  • Preheat oven to 400°F and line a baking tray with parchment paper.
  • In a skillet, cook the chicken breasts for 5 minutes on both sides, until browned. Remove from the heat.
  • Mix half of the oil and 1 tbsp of the parsley and 1 tbsp of the basil thoroughly, and pour over the tomatoes, peppers and chicken breasts. Bake for 25 minutes.
  • In a small blender, throw in the olives and remaining herbs and oils- blend thoroughly before scraping the sides and blending again. Chill until ready to serve.
  • While the chicken and vegetables are cooking, make your couscous. Boil 3 cups of water with 1 tsp salt and the butter before adding the couscous. Keep on a rolling boil for 4-5 minutes before removing from the heat and allowing to steam with the lid on. Stir in the remaining herbs into the couscous and salt and pepper to taste.
  • Serve family style in a large bowl, topping the couscous with roasted vegetables and sliced chicken. Top with the olive tapenade and enjoy!
