Protein Packed Dark Chocolate & Blueberry Oat Bake

Oat bakes are my absolute favorite baked good to make when I’m craving something sweet but also filling. This recipe is loaded with protein, fiber, healthy fats, and nutrients like omega-3 fatty acids and calcium. Plus, it has chocolate…need I say more? I can eat this for breakfast, lunch, dinner, or even as a post-workout snack. To me, an oat bake is meant for any time of day. At least that’s what I tell myself. The great thing about this recipe that you can switch up the ingredients to match your mood! Maybe one day you’re craving a double chocolate oat bake with cocoa powder. Maybe you’re feeling an apple and cinnamon duo or pumpkin spice. The world is your oyster when it comes to oat bakes, so get creative and add ingredients that feel and taste good to you!

Instructions

  • Preheat the oven to 395 degrees F
  • Take ½ a cup of the oats and the 1 tbsp of chia seeds and place in a food processor or blender to create an oat + chia seed flour
  • Once blended, place the flour, the rest of the rolled oats, and other dry ingredients into a medium mixing bowl
  • Add in the mashed banana and almond milk and then whisk together to create a thick batter
  • Lightly fold in some of the blueberries and dark chocolate chunks, then pour the mixture into a small baking dish
  • Add more blueberries and chocolate to the top and place in the oven for 25 minutes
  • After letting the oat bake cool down for a few minutes, drizzle (aka completely cover) with almond butter or another nut butter of your choice
