Sauteed Kale with Portobello Mushrooms


In a large skillet, heat 1 tablespoon of the oil over medium-high heat. Add the garlic and leeks; sauté until leeks are soft, 2-3 minutes. Next add the mushrooms and a pinch of salt and pepper; continue to cook stirring occasionally until mushrooms are soft, 5-8 minutes. Add the last tablespoon of oil to the pan along with the kale; cook until wilted, 5 minutes. Stir in the vinegar and continue to cook for a couple minutes. Remove from heat and season with salt and pepper.
