Sesame Cucumber and Carrot Salad


In a small bowl, mix together oil, vinegar, honey, and a pinch of salt. In a larger bowl, combine cucumber, carrots, and red onion. Pour dressing over the top; stir to combine. Top with cilantro and sesame seeds. Allow the vegetables to absorb the flavors by placing in the refrigerator for 5 to 10 minutes.
