Shrimp and Mango Salsa

Here in the Midwest, summer has arrived! With these hotter days, comes the need for lighter meals. This Shrimp and Mango Salsa is perfect for these hot and muggy days.

Whether you’re looking for a quick work-night dinner or an appetizer to take to your next cookout, this is the dish you’re looking for. Simply serve with chips, garnish for fish or chicken, filling for your quesadillas, enchiladas, and tacos, or simply fill baked wonton shells for the perfect appetizer! Given that we live in the Midwest, access to fruit is somewhat limited. So, if mango is not available, simply substitute with Pineapple or Peaches.
