Spicy Salmon Tacos

Taco Tuesday has become an Instagram staple, filling up foodie timelines the world over. From the more traditional steak and chicken to more adventurous ones with breaded cauliflower or even tuna tacos- the latter bridging the gap between Hawaiian and Mexican and an incredibly exciting way! This recipe is a spicy twist on fish tacos. Rather than grilling or frying, the salmon is oven roasted before being flaked over a generous spoonful of Asian inspired coleslaw.

Salmon is a great alternative to the traditional white fish used in fish tacos. Packed with the same nutritional benefits (high in protein, great source of vitamin D and omega-3 fats) salmon pairs extremely well with the Thai flavors in the coleslaw – the rice vinegar, sesame seeds, fresh cilantro – and the spicy citrus mayo dressing completes the dish perfectly.

Instructions

  • Preset oven to 375°F and line a baking tray with parchment.
  • Drizzle the salmon with the honey followed by the cayenne pepper. Bake the salmon for 25 minutes.
  • To make the coleslaw, finely chop the cabbage and grate the carrots into a large bowl.
  • Stir in the vinegar and oil, before mixing in the cilantro and sesame seeds. Mix the mayo, lime juice and sriracha together and chill until serving.
  • Flake the salmon into a bowl, being sure to pick out any bones.
  • Line up your fish, coleslaw and mayo and ENJOY!
