Ingredients
1 tablespoon butter
4 apples, peeled, cored, and sliced into 2-inch pieces
6 ounces blackberries
1 tablespoon honey
1/4 teaspoon cinnamon
1/2 cup water
1 1/2 cups unsweetened coconut milk
2 tablespoons freshly grated coconut (optional)
Salt
1/4 cup granola of choice (optional)

Instructions
- Melt butter over medium heat in a large sauté pan.
- Add the apples and a pinch of salt and sauté for 1 minute (just enough to coat the apples with the butter).
- Add the blackberries, honey, cinnamon, and water, and bring to a boil.
- Reduce to a simmer and allow to cook until the apples are soft and the liquid is absorbed, 15 minutes.
- Check to make sure there is enough liquid and the apples are not sticking or burning to the bottom of the pan.
- Divide apple mixture among four bowls. Pour coconut milk over the top and then add freshly grated coconut and granola (if using
