Thai Curry Cauliflower Skillet Steaks

With the meteoric rise of alternative diets over the years, and with the impact of animal agriculture and climate change becoming more frequently reported on, it should be a surprise to no one that January has been renamed Veganury! Campaigns all across the world have been launched, encouraging people to commit to, at the very least, a month of living vegan.

This recipe is a celebration of the humble cauliflower, that is in its prime right now. Subtle earthy notes, and a unique flavor, make this an exceptionally diverse vegetable. By making full use of the head, you’re not only creating a superb meal, but reducing food waste too. Another awesome 2020 trend.

Instructions

  1. Wash the cauliflower and remove the outer leaves and core. Starting from the middle, cut two, 1 inch thick slices, and set aside.
  2. Brush both sides of the cauliflower steaks with olive oil, and fry in a skillet or low sided pan for 15 minutes in a medium-low heat, turning gently for a further 15 minutes until tender.
  3. While the steaks are frying, cut the remaining florets into small chunks and boil for five to seven minutes in unsalted water.
  4. In a food processor, blend the drained cauliflower florets, the milk, melted butter and ½ cup of coconut yogurt. Blend for 2-3 minutes, or until creamy and smooth.
  5. When cooked, remove the steaks from the skillet or pan and reduce the heat to low.
  6. Stir together the curry paste and the remaining half of the yogurt. Spoon the creamed cauliflower puree onto plates, followed by the steaks and a generous spoonful of the curry sauce. Sprinkle the chopped chili and fresh coriander and serve.
