Tomato, Mini Sweets, and Corn Salad

Per the husband’s request, we are having one of his favorite dishes I make on Father’s Day, which is Tomato, Mini-Sweet, and Corn Salad. It is so simple, packed with flavor and texture, and a perfect side dish for summer cuisine. We have everything you need to whip up this dish for Father’s Day. The Fireworks Mix cherry tomatoes from 80-acres are back, and we have sweet Vidalia onions which are a must for this salad.


  1. In a medium bowl, combine onion, peppers, tomatoes, and corn.
  2. In a small bowl, whisk together oil, lime juice, vinegar, honey, and cumin powder.
  3. Pour dressing over salad.
  4. Add the chopped cilantro, a pinch of salt, and a couple turns of fresh ground pepper; stir to combine.
  5. Allow to marinate for at least a half hour.
