Spicy Riced Cauliflower Vegan Taco Meat

Don’t let the word vegan scare you! This spicy riced cauliflower taco meat is so delicious, you may be asking for it over the real stuff. Super filing and full of nutrients!

Instructions

  1. In a large cast iron skillet, heat olive oil and garlic.
  2. Add riced cauliflower and red pepper, cook for 7-10 minutes stirring occasionally.
  3. Add seasonings, walnuts, and green onions (save some green onions for presentation if you want).
  4. Stir and cook for another 7-10 minutes until cauliflower is tender.
  5. Toast corn tortillas then top with vegan meat.
