Having a 4th of July Feast!

Happy Saturday! Can you believe the Fourth of July is right around the corner? This year we are staying in town, so we are loading up on all our grilling favorites—this way we can have an epic cookout with our friends and family to celebrate Independence Day.

Tricolored Popsicles

My kids have one request for our Fourth of July cookout—Tricolored Popsicles made with strawberries, yogurt, and blueberries. They are easy to make, the kids love them, and I know they are super healthy! I’ve made these with whole milk kefir, yogurt and coconut milk—all of which are good.

This year we will be making our popsicles with Snowville Creamery’s whole milk yogurt. This grass-fed yogurt is thick, creamy, and made with three ingredients: milk, cream, live cultures. If you don’t have popsicle molds, no worries, you can use small paper cups and popsicle sticks. They work just as well.

Grilled Corn on the Cob with Fresh Herbs

My husband, Matt, is requesting grilled corn and specifically this recipe for Grilled Corn on the Cob with Fresh Herbs. We use whatever fresh herbs we have in the fridge at the time—dill, thyme, basil, cilantro—it all tastes good! Usually we top the corn with grated parmesan, but we have also crumbled feta cheese and it is equally as awesome.

Lamb Burgers with Rosemary-Tomato Jam

And what might be my request? Well, it is lamb burgers! I try to replicate the lamb burger found at one of our favorite restaurants in the Indy area. Ground lamb topped with feta cheese and homemade rosemary-tomato jam. We use Seven Sons’ ground lamb, feta cheese from Caprini Creamery, hamburger buns from Cornerstone Bakery, and Fireworks Mix tomatoes from 80 Acres Farms.

To make the tomato jam, just quarter the tomatoes and add to a small saucepan. Add a pinch of salt, a sprig of rosemary, a drizzle of honey, and a splash of balsamic vinegar. Simmer over low heat, mashing periodically with a potato masher (or fork), until the tomatoes concentrate into a jam. Grill up your burgers and buns then top with crumbled feta and spread on the tomato jam. It is an incredible combination of flavors!

And let us not forget, one of our all-time favorite summer fruits—cherries! In season just in time for the Fourth of July celebration! There is nothing better than a big bowl of cherries to snack on while you are grilling out.
