I can’t believe we are on the eve of April. Like many of you, I am so ready for spring and all the changes it brings. 

For us, it means more time outside and a shift in how we eat and what we eat. We’ve had a lot of meals with asparagus and peas, and we couldn’t be happier!

Did you know that we have an app now? I cannot explain what a TIME saver it has been for me! Sitting in the car line to pick up the kids from school, waiting at dance practice, on lunch break—it doesn’t matter where I am—I can always pop open my Green Bean app and start shopping.

My most favorite time to use it is in the kitchen when I run out of something. I just grab my phone and add it to my shopping cart. It’s so easy! Now it’s a rarity I forget anything because my grocery list has become my shopping cart. Watermelon and Korean Daikon Radishes

Let’s talk about these watermelon and Korean daikon radishes coming from Great River Organics, which is a non-profit co-op of farmers from central Ohio. Their farmers are all certified organic and grow some of the most beautiful produce I have seen.

The watermelon radishes have a brilliant pink center with a green outer edge. They look just like sliced watermelon. Their taste is mild and slightly sweet. My kids love them, and they are so good for them, too! The Korean daikon have a beautiful, bright white center with a touch of green on the outside. They have a mild spice and subtle sweet flavor.

Both are super crunchy and great added to salads for flavor and texture. Check out this simple recipe that uses both the watermelon and Korean daikon radishes. Do not miss out on these beauties!

 

Fermented Foods

One of my favorite nutrition topics is fermented foods! I could (and do sometimes 😊) talk about them all day long. Fermented foods are packed with good bacteria called probiotics. They help create a healthy gut flora that aids in digestion and immunity.

Did you know that 80% of your immune system is found in your gut? One of the best things you can do to boost your immune system is to provide your gut with a wealth of good bacteria. Adding fermented foods and beverages to your daily diet does just that.

Check out our fermented foods section under the grocery tab. There is something for everyone! Some of our favorites are Presto’s cherry vanilla kombucha—a healthy alternative to cherry soda. Cleveland Kraut’s Curry Kraut—I live on this stuff!

Every morning I have over-easy eggs with a side of curry kraut. It is what gets me going in the morning! The kids love Farmhouse Culture Garlic Dill Kraut. They think they are eating pickles, and I am happy because they are getting their daily dose of probiotics.
