Butternut Squash Noodles with Beef and Spinach – One Pan Recipe


This hearty and delicious dinner comes together in minutes!

  1. Begin browning beef in a large skillet. Add in spice mixture. Continue cooking beef and spices until beef is about 75% cooked through.
  2. Add in minced garlic and cook for 1-2 minutes longer.
  3. Drain fat from beef and add in the butternut squash noodles. Cook until noodles are al dente, about 5-7 minutes.
  4. Stir in spinach and cook until just wilted.
  5. Garnish with toasted pine nuts and cheese. Enjoy!

*Weight Watchers points: For 1/2 the pan you count points for 4 oz sirloin (5), 1/4 oz fontina (1), and 1 tsp pine nuts (1). The remaining ingredients are 0sp. 6 sp/serving.

1 package Veggie Noodle Co. butternut squash noodles
1/2 lb Foxhollow Farm ground sirloin
2 heaping cups spinach, roughly chopped
1/4 tsp of all of the following spices: dried parsley, Italian seasoning, fennel seed, paprika, onion powder, salt, pepper
Pinch of crushed red pepper, to taste
1 clove minced garlic
Toasted pine nuts to garnish
Cheese, to garnish. I used shaved Sartori Fontina cheese, but fresh Parmesan or even a few dollops of fresh ricotta would be good.
