My Gramma is an amazing baker. I remember coming home from school, and she would be in the kitchen, pulling out freshly baked treats from a hot oven. It was heaven! I’ll never forget the smell of that house. Simply wonderful. The holidays were a special time for her. She’d make hundreds of cookies. Hundreds! This was just for home and family. I don’t know where she found the time or energy.
One of the first ever recipes she taught me was her Thumbprint cookie recipe. The cookie was perfectly crumbly and slightly sweet, similar to a delicious shortbread, but the fillings were always the star! She would use shiny jellies, and chocolate kisses, soft caramels and lightly dust them with confectioners’ sugar. Gah, so dreamy!
Her original version uses shortening. I am not a fan of it, so I switched that out for unsalted butter. This recipe makes 24 little, wonderful bites of pure joy, and can very easily be doubled, tripled or quadrupled. Here’s what ya do:
1.) Preheat oven to 350. Line a baking sheet with parchment.
2.) In medium bowl, mix the softened butter and brown sugar until thoroughly combined. Add egg yolk and vanilla. Beat well (I don’t even use a hand mixer for this, just a wooden spoon does the trick – I told ya, this is old school). Slowly incorporate the flour and mix until all the flour is mixed in.
3.) Cover and chill dough for about 20 min. In small bowl, whisk the egg white until frothy.
4.) Remove from refrigerator, and form 24 1″ balls, dip in the egg white, and place on the parchment lined baking sheet.
5.) Stick your cute little thumb right in the middle and make a nice indentation (if you’ve got giant thumbs, you can use the small end of a melon baller or your pinkie).
6.) Bake for about 12-16 min. Just until they are starting to turn golden brown on the bottom.
7.) Cool completely and top with your choice of fun fillings. Lightly dust with confectioner’s sugar. It’s the holiday season, share with your loved ones.
