Overview and Reheating Instructions
Our dishes are simply reheated in the order of longest to reheat, to shortest. After reheating, they’re presented on a plate or in a bowl, and garnished. The oven should be preheated fully when applicable. The objective is to have all the components reheated and ready to plate at nearly the same time. Some variances will occur and that’s just fine! Everything will come together and be great in the end!
Follow These Steps
- Preparation Sequence: This dish simply needs the lamb and pita bread warmed. Then assemble the sandwiches and add the side salad. Let’s get the lamb warming and preheat your oven to 350 to warm the pita. Spread the lamb evenly on a sheet tray. Place in the oven, preferably on an upper rack and heat for 10-12 minutes until the edges start to get crispy. While the lamb is heating, place the pita bread on the oven rack below and let warm.
- Plating: Once the lamb and pita are hot, build your sammies. Smear the warm pita with hummus on one side and add a small pile of lamb. Add a dollop of tzatziki on the lamb and fold in half like a taco. Use a plate large enough to add the side salad, or keep the salad on the side.
- Finishing Touches: Use a bowl to mix the greens and marinated veggies and feta. There may be more dressing than wanted in the marinated veggies, so dip the veggies into the bowl with the greens and add more marinade to your liking.
