1 tray of (8) pork enchiladas

32 oz tub of Mexican street corn salad

32 oz tub of red rice

12 oz tub of salsa verde

8 oz tub of pickled red onions

 


Overview and Reheating Instructions

Our dishes are simply reheated in the order of longest to reheat, to shortest. After reheating, they’re presented on a plate or in a bowl, and garnished. The oven should be preheated fully when applicable. The objective is to have all the components reheated and ready to plate at nearly the same time. Some variances will occur and that’s just fine! Everything will come together and be great in the end!

Follow These Steps

  1. Preheat your oven to 350 degrees.
  2. You’ll need to heat up the rice. You can do that any way you want. The container is microwave safe. It is not oven safe. You can put the contents of the container in an appropriately sized saucepan and heat it up that way. Just take it slow, keep it covered and add a little liquid before you start.
  3. Take the lid off the enchiladas. There is a little sauce in the pan already. Pour the salsa verde on the enchiladas. You can use all of it if you want. You can save a little for later if you want. It’s up to you. You can add a little cheese if you desire. Wait until the sauce bubbles and the ends of the tortillas start to brown, like 10-15 minutes.
  4. The Mexican street corn salad is meant to be served chilled. Plate those components together. Chow down. Don’t forget to liberally use the pickled red onions.
