Bacon, Pesto, Tomato Grilled Cheese Sandwich

Confession time: I have been known to exaggerate, but this is the greatest grilled cheese sandwich of all time.  Diving into your mom’s classic grilled cheese and soaking that buttery delight in a warm bowl of tomato soup, is an iconic childhood memory for most.  I don’t know about you, but this meal was and forever will be a staple in my eyes. Oh, and my belly 🙂

Why not spruce the traditional grilled cheese up a bit? This bacon, pesto, tomato grilled cheese is the simplest, coziest dinner. The savory, toasted sandwich dipped into creamy, tomato basil bisque is the perfect version of an adult grilled cheese.   1. Preheat your oven to 400℉.
  2. Once preheated, bake bacon for 20 minutes, or until it has reached desired crispiness.
  3. While bacon is cooking, prep your grilled cheese. Slice tomatoes, four pieces of sourdough bread, and four pieces of cheese (two mozzarella and two cheddar).
  4. Spray one side of each bread slice with olive oil, to help get the bread toasty.
  5. Once bacon is cooked, spread hummus on two slices of bread (not the olive oil side). Top hummus with 1 slice of mozzarella and 1 slice of cheddar cheese, tomatoes, and bacon. Top with the other slice of bread (olive oil side up).
  6. Cook grilled cheese in a sprayed skillet on medium heat about 4 minutes each side, or until bread is golden brown and cheese is melted.
  7. While cooking your grilled cheese, warm up your soup on the stove. Enjoy 🙂
