BBQ Chicken in Grilled Pineapple boats

Get creative with how you plate your grilled meats this summer by making a pineapple boat! Simply cut the pineapple lengthwise, brush with oil and add to the grill, then remove and scoop out the inside once you’ve got your desired grilled marks!


  1. Halve the pineapple long ways.
  2. Cover pineapple and red pepper with avocado oil.
  3. Put the pineapple on the grill for 10 minutes each side (high heat then medium to get grill marks).
  4. Put the red pepper on the grill for 2 minutes each side.
  5. Remove the pineapple from the grill and carve out the inside.
  6. Dice pineapple and the red pepper.
  7. In a large bowl combine rice, red peppers, pineapples, salt, pepper, roasted garlic, shredded chicken, and 1 cup of BBQ sauce. Mix until evenly distributed.
  8. Split mixture and place back into the pineapple shells.
  9. Drizzle with left over BBQ sauce, sliced jalapeños. Add chives. Enjoy!
