• 2 (15 ounce) cans black beans, rinsed and drained*
• 1 cup Omena Organics frozen corn, thawed*
• 1 red bell pepper, diced*
• 1 medium clove garlic, minced
• 1 tablespoon minced shallots
• 1 teaspoons salt
• 1/8 teaspoon cayenne (optional)
• 1 tablespoon sugar (optional)
• ¼ cup plus 1 tablespoon extra-virgin olive oil
• 3 tablespoons lime juice plus zest from one lime*
• ¼ cup chopped fresh cilantro leaves, plus more for garnish
• 1 avocado, chopped

- Combine all ingredients except for avocado in a large bowl and mix well.
- Cover and chill at least 30 minutes and up to overnight.
- Right before serving, add avocado and fold gently, being careful not to mash the avocado. Garnish with more chopped cilantro if desired.
- Serve at room temperature. Serves 4-6
