Black Bean, Corn, and Red Pepper Salad with Lime Cilantro Vinaigrette

A perfect side dish to your Cinco de Mayo feast! It has all the textures and flavors from crisp and sweet bell peppers to soft and buttery avocado. Plus, it is filling and delicious!

Instructions

  • Combine all ingredients except for avocado in a large bowl and mix well.
  • Cover and chill at least 30 minutes and up to overnight.
  • Right before serving, add avocado and fold gently, being careful not to mash the avocado. Garnish with more chopped cilantro if desired.
  • Serve at room temperature.
