Blistered Oven Roasted Shishito Peppers with Magic Summer Sauce

This is my absolute favorite way to prepare and eat shishito peppers. I found this recipe around a year ago when we had our first shipment of local shishitos. This recipe is perfect for entertaining guests, especially when sitting around and watching sports. And, the sauce it is served with is. . . um. . . magical – hence the name.


  1. Place a large cast iron skillet under the broiler to warm. Meanwhile, place the peppers in a mixing bowl. Drizzle them with cooking oil and a healthy sprinkle of salt. Use your hands or a spatula to toss the peppers until evenly coated.
  2. Remove the skillet from the oven and pour the pepper into the skillet. Put the skillet back under the broiler. Cook the peppers without moving them until the peppers are blistered and darkened all over, 5 to 6 minutes. Take the peppers out of the oven and stir them in the skillet to ensure any peppers in the middle layer are evenly cooked. Keeping a close watch, place them back under the broiler for another 5 minutes or until darkened.
  3. Transfer the peppers to a plate and sprinkle with extra salt. Serve immediately with Magic Summer Sauce.
  4. To make the sauce, place all the ingredients in a small bowl and whisk to combine. Can be stored in the fridge for one week.
