Bok Choy and Shiitakes in Seasoned Broth


  • Heat the oil in a stock pot over medium heat. Add the onions; sauté for 2 minutes.
  • Toss in the garlic, mushrooms, bok choy, and ginger; stir to mix everything together.
  • Stir in the broth and tamari; bring to a simmer, cover, and allow to cook until veggies are tender, 10 minutes.
  • Stir in the cilantro.
  • Meanwhile, prepare the soba noodles according to the package directions, drain, divide among 4-6 bowls.
  • Ladle the broth over the noodles and enjoy! Serves 4-6
