Breakfast Duck Egg Poutine with Coffee Porter Gravy

If you’re a fan of poutine (French fries and cheese curds topped with a brown gravy), then here’s a fun way to enjoy this popular dish for breakfast! In this latest episode of Cooking with Sun King, Chef Steven takes a fun twist on this classic recipe by incorporating Sun King’s “When The Lights Go Out” Coffee Porter (a collaboration with Limelight Coffee Roasters) into a roux that contains deglazed bits of D’Artagnan Duck & Armagnac sausage. The addition of sunny-side up duck eggs makes this a breakfast to get excited about!


  1. In a high-walled skillet over medium low heat, slowly render duck sausage until crisp, about 7-9 min. Remove onto a paper towel lined plate and let rest.
  2. Add AP flour to rendered fat and cook for 2-3 min until fragrant and lightly toasted. Slowly drizzle in beer while constantly whisking, and then add beef broth. Stir occasionally until thickened (make sure it comes to a boil), season to taste and keep warm.
  3. Deep Fry (375) or Bake (425) French fries according to package directions, season with salt and pepper, and keep warm in a low oven.
  4. Fry eggs to preferred doneness, season to taste, and hold warm.
  5. To Assemble: Place warm fries on plate or platter, add cheese curds and crisped sausage, top with gravy until well covered (not soup), add egg and top with chives. Serve warm.
