Cherry Busey Ice Cream

Enjoy this end of summer treat that features tart dark cherries and Sun King Brewery’s Cherry Busey beer, a three-time Great-American Beer Festival medal-winning Flanders-Style Oud Bruin Ale produced using a complex cocktail of wild yeasts and aged in a bevy of barrels.

Instructions

For the Cherry Compote:

  1. Combine cherries and sugar in a small saucepan and slowly bring to a simmer over medium low heat until cherries have given up some liquid and sugar is dissolved. Reduce for 5-7 minutes until thickened and chill completely.

For the Ice Cream base:

  1. In a bowl, stir together 1⁄4 cup Cherry Busey and the cornstarch; set slurry aside.
  2. In a 4-qt. saucepan, whisk together remaining milk and the cream, sugar, syrup, and salt; bring to a boil over medium-high heat. Cook for 4 minutes; stir in slurry. Return to a boil and cook, stirring, until thickened, about 2 minutes.
  3. Place cream cheese in a bowl and pour in 1⁄4 cup hot milk mixture; whisk until smooth. Then whisk in remaining milk mixture. Pour mixture into a plastic bag; seal, and submerge in a bowl of ice water until chilled.
  4. Pour mixture into an ice cream maker; process according to manufacturer’s instructions. When about 90% set, add 1 1/2 cups Cherry Pie Filling and let machine fold in.
  5. Transfer ice cream to a storage container and freeze until set.

Learning and mastering food and beverage pairing has been a huge focus of Steven’s and is what led him to Sun King Brewery & Spirits.

As Culinary Director, Steven is currently building a database of paired recipes for all of Sun King Brewery’s variety of unique beers and handcrafted spirits. He is passionate about teaching other local chefs on how best to pair Sun King beer with their dishes. He aspires to educate not only the Sun King staff but all of Sun King’s fans with the knowledge of food and beer and why each style of beer pairs so well with various dishes.
