One Pot Colorado Chili with Coffee Porter

Chef Steven kicks it off right with this straight-forward chili Colorado recipe that you can make with only one pot. Made with Sun King‘s delicious When the Lights Go Out Coffee Porter. Instructions

For the Chili:

  1. In batches in a 6 qt sauce pan (or in the oven @ 375 until browned) brown the pork on all sides until golden.
  2. Remove pork from pan (or start with reserved pork fat from oven baked pork) and add onions, sauteing until translucent 4-6 min. Add garlic and cook for an additional 1 min.
  3. Add spices to onions and garlic and sautee for 2-3 min until oil has turned color and spices are very fragrant.
  4. Add When the Lights Go Out and Beef broth to cover (you might not need the whole 32 oz), simmer for 45 min to 1 hr or until pork is tender.
  5. Add water to cornstarch and add to simmering chili. Bring back to a simmer and season to taste.

To Serve:

  1. Heat Rice and Beans according to package directions.
  2. Warm or toast flour tortillas to taste.
  3. Top chili with cilantro, rice and beans, and enjoy!
