Creamy Spinach and Mushroom Toast


  • Heat the cream with the garlic and thyme leaves until fine bubbles form on the surface, then turn off the heat and set aside.
  • In a large skillet, melt 1 tablespoon butter over medium heat.
  • Add the mushrooms, a pinch of salt, and a couple turns of the pepper mill and cook until tender, 5-8 minutes.
  • Add the remaining tablespoon of butter and the chopped spinach to the mushrooms. Cook until just wilted, about 1 minute.
  • Pour the cream through a strainer directly into the pan and simmer until it thickens slightly. Taste for salt and season with pepper.
  • Set the toast on plates and mound the spinach and mushroom mixture over the top.
