Crunchy Honey Roasted Pecan Granola

I don’t know about you, but working from home these past few months has taken me to snack city! I find myself constantly opening the fridge to take a bite of last night’s dinner, shoveling handfuls of potato chips into my mouth, or pulling out the frozen Easter candy I stashed away last month.  As the bag of kettle, honey bbq chips came to an end last night, I decided to take matters into my own hands and create a healthy, crunchy snack.  Something with a little bit of sweet, a little bit of salty, and just a little bit healthier 🙂

This roasted, honey pecan granola is the perfect crunchy, snack to have on hand.  Best of all, guilt-free and made with simple, healthy ingredients. Oh, and your home will smell like a vanilla, cinnamon candle after roasting it. What is not to love here?  In conclusion, shovel away, take that handful, and even store some away for next week. I love putting this granola over my favorite yogurt, on top peanut butter banana toast, and mixed into vanilla ice cream. This recipe is super straightforward, quick, and under 10 ingredients.   1. Preheat your oven to 350℉.
  2. In a bowl, mix together oats, pecans, chia seeds, cinnamon, and salt.
  3. Add in melted coconut oil, honey, and vanilla. Stir until everything is coated.
  4. Line a baking sheet with parchment paper, and evenly spread the granola mixture flat onto the pan.
  5. Bake for 25-30 (28 works best for me) minutes, stirring halfway through.
  6. Let the granola cool for about 20 minutes.
  7. Sprinkle with chocolate chips.
  8. Enjoy 🙂
