Garlic Mashed Cauliflower

Looking to cut back on the number of carbs and calories that come with eating mashed potatoes? Consider swapping out the potato with a flavorful head of cauliflower. You’ll be pleasantly satisfied with this garlic mashed cauliflower recipe!


  • Bring a large pot of salted water to a boil.
  • Add the cauliflower and cook until fork tender, 10 minutes.
  • Drain and then place in a food processor with butter, ½ teaspoon salt, and a couple turns of fresh black pepper.
  • Purée until smooth, or if you like more texture, mash with a potato masher.
  • Optional – Add sliced green onions on top for added color and flavor!
