Hazy IPA Vegetarian Pasta

This Hazy IPA vegetarian pasta features Sun King Brewery’s Foxy Jam Pants, roasted Delicata squash, Sfoglini semolina pasta, and Carr Valley Grana Carina cheese. Finished with toasted pumpkin seeds for an added crunch, this pasta dish is loaded with standout flavors and textures that you’ll absolutely love!


  1. Toss Squash in Olive oil and Salt and Roast in a 400° oven until tender and lightly golden brown.
  2. Meanwhile, in a high walled skillet, sautee shallots in 2 tblspn olive oil until lighty brown and fragrant, add Foxy Jam Pants and Reduce by half. Add Heavy cream and lemon zest and reduce by 1/3 or until the cream coats the back of a spoon. Keep Warm.
  3. Bring 4 qts of water to the boil and add salt. Cook pasta 1 minute under directions on the box. Remove pasta from water (save that pasta water!!) and transfer pasta to heavy cream mixture and cook 2-4 min until everything has combined.
  4. Add lemon juice, squash, and 3 oz of cheese to pasta and continue to simmer until well combined. If pasta looks dry, add pasta water until sauce is creamy and smooth. Serve with toasted pumpkin seeds and bacon (optional).

He aspires to educate not only the Sun King staff but all of Sun King’s fans with the knowledge of food and beer and why each style of beer pairs so well with various dishes.
