Lettuce Wrapped Blue Cheese & Spinach Bison Burgers

Ground bison from Woodland Farms is delicious by itself and is the star of the show in this recipe. I mixed in blue cheese and spinach for some added flavor (using egg to help bind the ingredients together and setting the patties in the refrigerater so they’d hold up better on the grill).

The blue cheese adds a sharp and salty flavor while the spinach adds a mild, sweet taste to these bison burgers. Topped with sweet muddled blackberries and more blue cheese, then wrapped in romaine (or you can use chard), this may quickly become one of your favorite new ways to make burgers!


  1. In a large bowl combine bison meat, egg, steak seasoning, blue cheese, and spinach.
  2. Mix until incorporated (but don’t overmix).
  3. Take a handful to make a medium size patty and place on a plate,
  4. Refrigerate patties for 15 minutes (they’ll hold up better on the grill this way).
  5. Heat grill or pan and cook for 3-5 minutes on each side or until done.
  6. In a small bowl muddle blackberries.
  7. Wrap bison burger in a section of romaine or rainbow chard.
  8. Top with muddled blackberries, extra blue cheese, and enjoy.
