Linguine Carbonara with Smoking Goose’s Applewood Smoked Bacon

There is joy in the simple things – a strong black coffee, the perfect over easy egg, and a lovingly made carbonara. This tried and trusted dish is a staple at many Italian restaurants, both high end and casual dining, and perhaps because it is such a quick and easy dinner, it’s also a popular meal in many a home.

Often described as having a “humble” ingredients list, you can turn this dish up to a 10 by upgrading your bacon and pasta. Fresh is best when it comes to linguine, fettuccine or your pasta of choice, and RP’s Pasta has a stellar range that is ready in minutes. This recipe was elevated by the addition of Smoking Goose’s exceptional Applewood Smoked Bacon, a must for any bacon-lover! Ready in a matter of minutes, this is sure to become a family favorite in no time.

  • Chop the bacon slices into 1 inch pieces and fry on a medium-high heat until browned and crispy, set aside.
  • Whisk the eggs together with grated parmesan and black pepper – add more pepper if you’d like!
  • Cook the pasta as per the instructions (2 minutes on a rolling boil), drain but retain ½ cup of the pasta water.
  • Pour in the reserved pasta water and egg/parmesan mix with the pasta, then fold together until a glossy coat covers the pasta.
  • Sprinkle the chopped bacon, grated parmesan, basil and/or green onions and serve.
