Ingredients
3 slices of Smoking Goose Applewood Smoked Bacon
2 large eggs
½ cup grated parmesan
1 pack of RP’s Pasta (linguine)
1 tsp black pepper
¼ tsp salt
Fresh basil or green onions to garnish

Instructions
- Chop the bacon slices into 1 inch pieces and fry on a medium-high heat until browned and crispy, set aside.
- Whisk the eggs together with grated parmesan and black pepper – add more pepper if you’d like!
- Cook the pasta as per the instructions (2 minutes on a rolling boil), drain but retain ½ cup of the pasta water.
- Pour in the reserved pasta water and egg/parmesan mix with the pasta, then fold together until a glossy coat covers the pasta.
- Sprinkle the chopped bacon, grated parmesan, basil and/or green onions and serve.
