Mashed Russets and Yams with Goat Cheese


  1. Place potatoes and yams in a large pot, cover with water and bring to a boil.
  2. Reduce heat and simmer until tender, 20-25 minutes.
  3. Drain well, return to pot, add goat cheese, milk, butter and mash until almost smooth (I like to mash with a potato masher then blend with an immersion blender)
  4. Season with salt and pepper and serve.
