Portobello Mushroom Tacos Recipe

Portobello mushroom’s texture and umami flavor make them an easy substitute for meat in dishes. In this dish, they are seasoned with smoky paprika and finished with a smoky-chipotle salsa to create the most perfect meatless taco.


Using a large skillet, warm the oil over medium heat and add the onions, garlic, and paprika. Cook until the onions soften and brown slightly (10 minutes). Add the mushrooms and cook for another 10 minutes or until the mushrooms turn dark and start oozing juices. Squeeze fresh lime juice (from half a lime) over the top and turn off heat. Season to taste with salt and pepper. 

Serve tacos in corn tortillas and topped with avocado, cilantro, feta cheese, salsa, and lime wedges.
