Quinoa & Garbanzo Bean Salad with Cucumber & Heirloom Cherry Tomatoes

A light and refreshing salad made of quinoa, garbanzo beans, and a bright mix of fresh cucumbers, heirloom cherry tomatoes, and minced mint. All tossed together with a simple olive oil and red wine vinegar dressing. Perfect for lunch or a side veggie dish at dinnertime.


Whisk together oil and vinegar in a small bowl. Season with salt and freshly ground pepper.

Combine quinoa, garbanzo beans, cucumber, cherry tomatoes and mint in a medium mixing bowl. Pour dressing over the top. Stir to combine and coat salad with dressing.
