Rainbow Haze Carne Asada Tacos

Sun King Brewery‘s Rainbow Haze (an IPA with a fruity hop character complimented by infused mango) adds a citrusy burst of flavor to this carne asada taco recipe! Using Bear Creek Farm‘s skirt steak that’s been rubbed in Spicemode‘s Sweet chilifire seasoning before been marinated in the Rainbow Haze, you’re in store for a mouthwatering meal.


  1. Season skirt steak with salt, pepper, and chili seasoning and place into a gallon ziplock bag.
  2. Add Rainbow Haze, cilantro stems, orange juice, and garlic. Cover and place in fridge to marinade from 1-4 hours.
  3. Don’t leave it longer than this – the beer and fruit juice acid will break down the flesh too much. Remove steak from fridge a half hour or so before cooking.
  4. Gently dry steaks off and brush with vegetable oil. Cook steak approx 3-4 minutes each side. Let rest 10 min and thinly slice against the grain.

To Serve:

  1. Toast tortillas to your liking, fill with skirt steak slices, diced mango and crumbled queso fresco. Top with cilantro leaves and sriracha. Enjoy!
