Roasted Cauliflower with Bacon and Dates Recipe

A simple, sweet and salty dish that combines different flavors and textures. It can be used as a quick side dish to your busy weekday or a crowd-pleaser for a dinner party. The original recipe uses prosciutto; however, I used bacon because I always have that on hand.  

Instructions

Preheat oven to 400 degrees. 

Cut cauliflower into 2-inch florets. Arrange in a single layer on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. 

Put cauliflower in the oven and roast for 15 minutes, until starting to soften.  

While cauliflower is cooking, slice dates into thin pieces. Cut bacon into 1-inch pieces (if using prosciutto, slice into ribbons). 

After 15 minutes, take cauliflower out of oven, stir, and add the date pieces and bacon. 

Continue to roast cauliflower for another 15 to 20 minutes, until golden. [Editor’s note: Be sure to check after 15 minutes to make sure the dates are not burning.] 

Garnish with chopped parsley, a pinch of crunchy salt, and a squeeze of fresh lemon juice.
