Roasted Mini Sweets Stuffed with Goat Cheese


  1. Preheat oven to 375 degrees.
  2. Remove tops and any seeds from the mini sweets.
  3. Pour oil in a small casserole dish and then add the peppers; coat the sides of the dish and the mini sweets with the oil.
  4. Mix the garlic and goat cheese.
  5. Stuff each pepper and lay flat in the casserole dish.
  6. Sprinkle with salt and pepper; roast in oven for 10-15 minutes or until peppers are soft when a fork is inserted.
