Sausage & Hearty Vegetable Sheet Pan Meal

Families are easily divided these days, be it over football or politics. But there is nothing that brings people together better than hearty meals, especially ones that are simple, healthy and can effortlessly be adjusted for any number of dietary restrictions. This easy sheet pan dinner features some kicking smoked fennel sausages from Smoking Goose and exceptional plant-based links from Beyond Meat.

This cooler winter weather sees a wonderful shift in the produce available on the Green Bean Online Store– think beets, broccoli, potatoes and squashes, as well as more unique vegetables such as fennel and celeriac. Both the Smoking Goose and Beyond Meat sausages featured in this recipe have some heat, so pair really well with equally punchy ingredients like fennel and Brussels Sprouts and the fiery yet sweet mustard dressing.


  • Preheat oven to 450°F and line a sheet pan with baking parchment.
  • Wash, chop and prepare your chosen vegetables and set aside in a large bowl.
  • In a smaller bowl, mix together the olive oil, mustard and fresh herbs and pour over the prepared vegetables. Stir thoroughly to ensure an even coating.
  • Transfer the marinated vegetables to the lined sheet pan and bake for 30 minutes before adding the sausages and cooking for a further 20.
