Shaved Brussels Sprouts and Bacon Salad

This shaved Brussels sprouts and bacon salad is a wonderful side dish during the warmer months – minimal cooking and a quick toss of ingredients and you are ready to go!


  1. In a small bowl, add the lemon juice, apple cider vinegar, and red onion. Set aside for 10-15 minutes then slowly drizzle in the oil while quickly whisking. It should create a creamy looking dressing.
  2. Meanwhile, thinly slice the Brussels sprouts ¼ inch or thinner (a shredder attachment on a food processor works well) and add to a large salad bowl.
  3. Toss the Brussels sprouts, pecans, bacon, parmesan cheese, breadcrumbs (if using), and dressing together. Adjust seasonings with salt and pepper. Can be served immediately, although chilling it in the fridge for 30 minutes (or longer) allows the flavors to develop.
