Goat Cheese Caprese Salad

One of summer’s best treats in Italy or anywhere is Insalata Caprese or Caprese Salad, which, incidentally, also proudly displays the colors of Italy’s flag (red, white and green).


  • Cut the goat cheese log into ¼-inch-thick slices.
  • Core the tomatoes and slice them.
  • Arrange the tomatoes and cheese on a serving plate.
  • Chiffonade or tear the basil leaves over the salad.
  • Drizzle with balsamic vinegar and extra virgin olive oil and sprinkle with salt and pepper.
